Bananas Foster

Bananas are a staple at the fruit basket in our kitchen. I personally love bananas and I constantly experiment on recipes that will make use of them. I mix them with ground beef for some Arroz Cubano, or make desserts like Banana Cream Pie, or roll them inside a phyllo and make Banana Fritters. But there’s this banana dessert that I love to make because of its simplicity. I bet you all know Bananas Foster :)

Perfect Roasted Chicken

Who loves Ina Garten and her show/cookbooks Barefoot Contessa? Raise your hands! :P

I really love Ina Garten and it makes me sad that I couldn’t catch her shows here anymore… damn cable operator. On a brighter side, I still have her cookbooks and she’s online!

Last Saturday, my parents came over for dinner and I prepared Ina Garten’s Perfect Roast Chicken for them. With a little adjustment (I took out fennel because I didn’t have time to go to Santi’s and used leftover raw potatoes instead! *gasp, what was I thinking*), I still managed to make a real juicy perfect roast chicken :)

I think the photo makes it obvious!

Apple Carrot & Walnut Cupcakes

I haven’t been baking in a long while and I thought why not make use of my leftover carrots and apples?!

I found this recipe for Carrot Cupcakes from Joy of Baking. The blog post said the recipe will make moist and delicious cupcakes. I had second thoughts at first because I have been following recipes from blogs and I never had a very successful experience yet to date (that means, I still need to adjust some stuff to arrive at the outcome I want).

But… when I tried this recipe and the cupcakes came out, man, they’re really moist and delicious! I’m so stoked to share this recipe with you and I hope that you will also try it at home :)

Homemade Chili Garlic Sauce

In one of my visits to Salcedo Market, I got this chili flakes from Spices ‘N Flavors. I decided to make chili garlic sauce from it because I’ve been into making dumplings lately. It’s also my way of testing the merchandise.

Unfortunately, this product failed to deliver in my opinion. The chili flakes aren’t spicy. I wondered if they’re made from chilies at all! I was hoping this would be the star of my chili garlic sauce but I was forced to add more bird’s eye chilies (siling labuyo) to arrive at the spiciness that I want. Nevertheless, I was happy that I was able to make my very own chili garlic sauce at home.

Here’s the recipe —

Chicken & Green Beans With White Wine Vinegar

This is another chicken dish that’s easy to prepare. If you noticed, I’ve been posting a couple of chicken recipes here. I happen to join my friends on a no-rice diet and the chicken dishes are my best options to allow me to stick the diet without feeling deprived :)

I used green beans and white wine vinegar for this dish. It’s really simple, you’ll see.
