This is the third of eight grilled cheese sandwiches I prepared for the party I hosted for Foodbuzz 24×24 last August. It’s called Lala Longganisa.
Longganisa or longaniza is a sausage similar to a chorizo. Here in the Philippines, several regions known for producing tasty longanizas flavor them with indigenous spices. For example, those from Lucban, Quezon are known for the prominent garlic flavor. Those from Pampanga are usually salty with a hint of sour. My favorite version would be something called longaniza hamonada/hamonado which has a distinctive sweet taste. Longanizas from the Philippines are sometimes made of pork or beef, and now we even have some made of chicken, milk fish (bangus) or even tuna.
I used pan de sal because I wanted the sandwich to have a Filipino touch to it. However, you can make this sandwich even if you don’t have pan de sal or Philippine longaniza. You can probably use salsiccia or any sausage that you can take out from its casing and form into patties. As for breads, you can use any bread you like for a grilled cheese sandwich
So, the cast of characters are:
- longaniza, removed from casing and formed into patties
- pan de sal
- tomato sauce
Slice the bread in half, then brush some tomato sauce on each side (interior).
Fill it with one piece of fried longaniza patty.
Top with mozzarella. You can shred, grate or just slice it. It’s up to you.
Cover with the other half of the pan de sal and you’re ready to grill away!
