I knew that my weekend won’t be devoted to cooking I had to finish a project for my management class. But I don’t want to let the weekend go by without cooking at least one easy dish. And the easiest I could think of last Saturday was soft tacos.
I call this dish Filipino-style Soft Beef Tacos. It’s not authentically Mexican (sorry Mexican food fans) but the elements are there. It’s Filipino-style because it’s less spicy and a little sweet. Also, if you will notice, I did not include any greens. I had too much salads and cucumbers last week, I just wanted to eat meat. Ground beef galore.
- 1/2k ground lean beef
- 1 pack Old El Paso original taco mix
- 8 pcs medium tomatoes
- 2 cloves garlic
- 2 pcs small onions
- 2 pcs bell pepper
- 1 pc jalapeño
- 1 pc red chili
- 2 tbsp vinegar
- 2 tbsp brown sugar
- 2 tbsp tomato paste
- salt and pepper to taste
- grated cheddar
- 8 small soft taco wraps
Cook the beef til browned. Add in the taco mix. Simmer for 3 minutes.
Chop the tomatoes, garlic and onions. Saute them in a small amount of oil. Add the bell peppers and jalapeño. Stir in the tomato paste. Mix well. Add in vinegar, cover and simmer for 5 minutes. Add sugar, salt and pepper and adjust according to taste.
I used store-bought soft taco wraps (told ya it has to be something easy), you can use that too. Heat it in the microwave for 45 seconds.
Spoon up your beef. Lots of them Add salsa and cheddar cheese.
Wrap it up or eat it anyway you like. In my case, I folded it in half like a hard taco shell and munched my way through in no particular direction
Pretty easy but yummy. Was enough to make me full for a busy weekend.
